Immune-Boosting Vegetable Soup

INGREDIENTS

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 cup chopped kale
  • 1 cup chopped spinach
  • 6 cups chicken or vegetable broth
  • 1 can diced tomatoes
  • 1 can white beans, drained and rinsed 
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
  2. Add the carrots and celery and cook for a few more minutes.
  3. Add the kale and spinach and stir until wilted.
  4. Add the broth, diced tomatoes, and white beans. Bring to a simmer.
  5. Add the thyme and season with salt and pepper to taste.
  6. Let the soup simmer for 15-20 minutes, until the vegetables are tender. 
  7. Serve hot and enjoy your delicious and immune-boosting soup!

This soup is packed with nutrients from the vegetables, which are high in vitamins and minerals that support the immune system. The broth also adds additional minerals and collagen, which can support gut health and boost immunity.
