Quinoa and Sweet Potato Bowl with Grilled Chicken

INGREDIENTS

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard 
  • tablespoon apple cider vinegar 
  • tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

INSTRUCTIONS

  1. Preheat oven to 400°F.
  2. In a medium-sized pot, bring the quinoa and water to a boil. Reduce heat and simmer for 15-20 minutes, or until the quinoa is fully cooked and the water has been absorbed.
  3. On a baking sheet, toss the sweet potato and red bell pepper with olive oil, salt, and pepper. Roast for 20-25 minutes or until tender and slightly crispy. 
  4. While the vegetables are roasting, season the chicken breasts with salt and pepper, and grill them until cooked through.
  5. In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, and parsley.
  6. To assemble the bowls, divide the quinoa, roasted vegetables, and grilled chicken among four bowls. Drizzle the honey mustard dressing over each bowl, and serve immediately.
