Turmeric and Ginger Sweet Potato Soup

INGREDIENTS

  • 2 large sweet potatoes, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon grated turmeric (or 1 teaspoon ground turmeric)
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 1 tablespoon coconut oil
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a large pot, heat the coconut oil over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. 
  2. Add the sweet potatoes, ginger, and turmeric and stir to coat the vegetables with the spices. 
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let simmer until the sweet potatoes are tender, about 20-25 minutes. 
  4. Remove the pot from heat and let the mixture cool slightly. Then, using an immersion blender or a regular blender, blend the mixture until smooth. 
  5. Return the soup to the pot and stir in the coconut milk. Heat the soup over medium heat until it’s hot, but not boiling.
  6. Season the soup with salt and pepper to taste.

Turmeric and ginger are both known for their anti-inflammatory and antioxidant properties, which can help support the immune system. Sweet potatoes are also a good source of vitamin A, which is important for immune function. This soup is not only healthy, but also delicious and comforting. Enjoy!
