Quinoa Salad with Avocado and Citrus Dressing

INGREDIENTS

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado, diced
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

INSTRUCTIONS

  1. Rinse the quinoa in a fine-mesh strainer and place in a saucepan with 2 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes.
  2. Remove the quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside to cool.
  3. In a small bowl, whisk together the olive oil, honey, apple cider vinegar, salt, and pepper to make the dressing.
  4. In a large bowl, combine the cooled quinoa, diced avocado, orange and grapefruit segments, and chopped cilantro. 
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve chilled or at room temperature.

This salad is full of healthy ingredients, including quinoa, which is a great source of protein and fiber, and avocado, which is rich in healthy fats. The citrus dressing adds a bright, refreshing flavor that is perfect for relaxation.
