Ginger Turmeric Chicken and Vegetable Stir Fry

INGREDIENTS

  • 1 pound boneless, skinless chicken breast, sliced into thin strips 
  • 1 tablespoon coconut oil
  • 1 tablespoon grated ginger
  • 1 tablespoon grated turmeric
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced 
  • 1/4 cup chicken broth
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a large pan or wok, heat the coconut oil over medium-high heat. 
  2. Add the sliced chicken and cook until browned, about 5-7 minutes. 
  3. Add the ginger, turmeric, garlic, and vegetables to the pan and stir-fry for another 5-7 minutes, or until the vegetables are tender.
  4. Pour in the chicken broth and continue to cook until the liquid has reduced by half.
  5. Season with salt and pepper to taste. 
  6. Serve the stir-fry over brown rice or quinoa.

Both ginger and turmeric have anti-inflammatory properties that can help soothe the digestive tract, while the vegetables and chicken provide a healthy dose of fiber and protein. This dish is also low in fat and easy to digest, making it a great option for anyone looking for a meal that is gentle on the stomach.
