Salmon and Avocado Poke Bowl
INGREDIENTS
- 1 cup cooked sushi rice
- 1/2 pound sushi-grade salmon, cut into bite-sized pieces
- 1 avocado, sliced
- 1/2 cup diced cucumber
- 1/4 cup chopped scallions
- 1/4 cup diced mango
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame seeds
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
INSTRUCTIONS
- Cook the sushi rice according to the package instructions and set aside.
- In a small bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, sesame seeds, red pepper flakes, salt, and pepper.
- In a large bowl, combine the cooked rice, salmon, avocado, cucumber, scallions, and mango.
- Pour the dressing over the bowl and gently toss to combine.
- Divide the poke bowl into individual serving bowls and garnish with extra sesame seeds, scallions, and red pepper flakes.
- Serve immediately and enjoy your relaxing meal!
