Salmon and Avocado Poke Bowl

INGREDIENTS

  • 1 cup cooked sushi rice
  • 1/2 pound sushi-grade salmon, cut into bite-sized pieces
  • 1 avocado, sliced
  • 1/2 cup diced cucumber
  • 1/4 cup chopped scallions
  • 1/4 cup diced mango
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame seeds
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

INSTRUCTIONS

  1. Cook the sushi rice according to the package instructions and set aside. 
  2. In a small bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, sesame seeds, red pepper flakes, salt, and pepper.
  3. In a large bowl, combine the cooked rice, salmon, avocado, cucumber, scallions, and mango.
  4. Pour the dressing over the bowl and gently toss to combine.
  5. Divide the poke bowl into individual serving bowls and garnish with extra sesame seeds, scallions, and red pepper flakes.
  6. Serve immediately and enjoy your relaxing meal!
