Quinoa Salad with Avocado and Citrus Dressing
INGREDIENTS
- 1 cup quinoa
- 2 cups water
- 1 avocado, diced
- 1 orange, segmented
- 1 grapefruit, segmented
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
INSTRUCTIONS
- Rinse the quinoa in a fine-mesh strainer and place in a saucepan with 2 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes.
- Remove the quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside to cool.
- In a small bowl, whisk together the olive oil, honey, apple cider vinegar, salt, and pepper to make the dressing.
- In a large bowl, combine the cooled quinoa, diced avocado, orange and grapefruit segments, and chopped cilantro.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
