Ginger Turmeric Chicken and Vegetable Stir Fry
INGREDIENTS
- 1 pound boneless, skinless chicken breast, sliced into thin strips
- 1 tablespoon coconut oil
- 1 tablespoon grated ginger
- 1 tablespoon grated turmeric
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- Salt and pepper to taste
INSTRUCTIONS
- In a large pan or wok, heat the coconut oil over medium-high heat.
- Add the sliced chicken and cook until browned, about 5-7 minutes.
- Add the ginger, turmeric, garlic, and vegetables to the pan and stir-fry for another 5-7 minutes, or until the vegetables are tender.
- Pour in the chicken broth and continue to cook until the liquid has reduced by half.
- Season with salt and pepper to taste.
- Serve the stir-fry over brown rice or quinoa.
