Grilled Salmon with Roasted Vegetables
INGREDIENTS
- 4 salmon fillets
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges, for serving
INSTRUCTIONS
- Preheat oven to 400°F (200°C).
- Place the sliced bell peppers, zucchini, and red onion in a large bowl. Drizzle with olive oil and sprinkle with salt and pepper, then toss to coat.
- Arrange the vegetables in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, until tender and lightly browned.
- While the vegetables are roasting, preheat a grill or grill pan over medium-high heat.
- Season the salmon fillets with salt and pepper, then grill for 3-4 minutes per side, until cooked through.
- Serve the grilled salmon with the roasted vegetables and lemon wedges on the side.
