Turmeric and Ginger Sweet Potato Soup
INGREDIENTS
- 2 large sweet potatoes, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon grated turmeric (or 1 teaspoon ground turmeric)
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- 1 tablespoon coconut oil
- Salt and pepper, to taste
INSTRUCTIONS
- In a large pot, heat the coconut oil over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the sweet potatoes, ginger, and turmeric and stir to coat the vegetables with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let simmer until the sweet potatoes are tender, about 20-25 minutes.
- Remove the pot from heat and let the mixture cool slightly. Then, using an immersion blender or a regular blender, blend the mixture until smooth.
- Return the soup to the pot and stir in the coconut milk. Heat the soup over medium heat until it’s hot, but not boiling.
- Season the soup with salt and pepper to taste.
Turmeric and ginger are both known for their anti-inflammatory and antioxidant properties, which can help support the immune system. Sweet potatoes are also a good source of vitamin A, which is important for immune function. This soup is not only healthy, but also delicious and comforting. Enjoy!
